Ingredients:
1 TBSP Olive Oil
1 small yellow onion finely chopped
1 clove of garlic crushed
1 14oz can of crushed tomatoes
1 14-oz can of pinto, kidney, or black beans
1 lb lean ground beef (or chicken or turkey)
1-3 TBSP of chili power
1 tsp ground cumin
1tsp oregano
1 tsp salt
pepper to taste
Optional: cheddar cheese, guacomole,avocado, and salsa
Directions:
Heat the oil in a medium sized pot over low heat.
Add chopped onion until soft and translucent (about 5 minutes). Dont' let the onions get brown!
Add garlic, saute fro 1 minute.
Raise heat to medium.
Add ground meat and sautee while breaking up into small pieces with a wooden spoon.
Add spices, and stir well.
Drain beans, add to pot.
Add tomatoes and stir the mixture well.
Cook until the mixure bubbles.
Turn heat to simmer (low) and cook for another 10 minutes.
Serve hot as a soup, with nachos, or rice. Garnish with salsa, shredded cheddar cheese, guacomole, chopped avocado etc...
